Joann Fabrics has automotive upholstery material, believe it or not - check out their selection - some even has a foam backing on it.

The `79 Sports came with a headliner ???

My truck is supposed to be all original / unmodified (prior to me), and it has no headliner.
(and it doesn't look like it ever did, the inside roof sheet metal and paint are very nice and clean)

I can verify this. I did my Dakota with some nice fabric with foam. You can get the spray glue there too. I agree with Geez, i'd put some sort of insulator on before putting in new liner.

OG Arrow, when my liner came off my 85D50 the sheet metal was painted like it would be clean if they never put the liner in. So maybe yours is stock.
