I've replaced the Mikuni carb with a Weber, do I care about this anymore?

Only reason why you would care about that crusty EGR valve are the holes left behind in the inlet manifold. As long as you don't need to comply with smog regulations, all you'll need to do is make a small block off plate to seal the EGR galleries into the manifold.
