Will a 1987 2.4 galant head with jet valves fit on a 1992 mighty max 2.4

I checked Rock Auto for head gaskets for both vehicles and the numbers are the same. If both engines use the same gaskets I would assume that the head would physically fit. Go to the WIKI at the top of this page and you'll find a section on engines that might help you.
